Yes sync browsing can be activated on connect via the per-site option in the Site Manager.
For this to work you need to set the local and remote paths to the correct base of matching folder structure.
There is no way to change the sort order per-site I'm afraid you can only set it globally and this is done via the Preferences dialog > File Browser.
